INGREDIENTS

For the Wings

  • 1.5kg Chicken Wings

  • 2 Teaspoon Sweet paprika

  • 50ml Olive oil

  • 20g Salt And Pepper

  • 100g Plain Flour

  • Sunflower Oil

  • Mic’s Damn Hot Wing sauce

METHOD

  • 1. Unless already done by the Butcher, cut the wing into 3 pieces and discard the tips.

  • 2. In a large bowl mix the wings with salt, pepper, paprika and olive oil until evenly coated.

    3. If you have time, leave the wings to marinade for 20 minutes.

    4. Toss the wings in plain flour until coated with a light dusting.

    5. Heat a deep pan or fryer with Sunflower oil and fry in batches for 4 to 5 minutes each batch (or alternatively skip to number 6 and bake for 50 to 60 minutes or until crispy at 220C)

    6. Have oven preheated to 180C. Spread the wings on a large baking tray and bake in the oven for 10-15 minutes or until cooked through. They should be crispy.

    7. Transfer the crispy wings to a large bowl and toss in approx half a bottle of Mic’s Damn Hot Wing Sauce (or just enough to evenly coat the wings).

For extra indulgence stir in and melt a knob of butter on the wings before adding the Damn Hot Wing sauce

Blue Cheese Dip

  • 1 cup Mayonnaise

  • 1/5 cup crumbled Cashel Blue Cheese

  • 1 tablespoon Lemon Juice

  • Salt and Pepper
